Merlot
Merlot ranges from fruity, smooth and easy-going to age-worthy, full-bodied, and sophisticated. Often mistaken for its blending partner, Cabernet Sauvignon, Merlot is much smoother on the palate. As Merlot ages it becomes chocolatey, meaty, and can have tobacco aromas. Merlot also has refreshing but not overtly high acidity.
Best Paired with:
Meat: Fish: Grilled tuna steaks and swordfish, grilled veal, pork, lamb chops
Cheese: Parmesan, Munster, Brie, Colby, Gorgonzola
Sweets: Chocolate cake, pies with dark fruit flavors, tarts
