Pork Spare Ribs (St. Louis Style)
Pork spare ribs are taken from the pork belly. They are meaty and have a good balance of lean and fatty meat (slightly fattier than baby back ribs). They are great for smoking or baked with sauerkraut! The main thing with these ribs in comparison to baby back ribs is to slow cook them so they become super tender and finger-licking good!
