Wagyu Beef comes from a variety of breeds of cattle which yield exceptional marbling and produce a high percentage of monounsaturated fats in comparison to saturated fats.
Over 2,000 years ago, the Wagyu breed was originally raised for labor before they were consumed for meat. More recently, due to Japan’s rough terrain different breeding and feeding techniques were utilized in order to aid in digestion and to prevent cramping on small farms, such as massaging or adding beer/sake to the feed!
From Japan, where the goodness all begun, there are 4 breeds of wagyu: Japanese Black, Japanese Brown, Japanese Polled, and Japanese Shorthorn. In addition to the increase of healthy monounsaturated fats, wagyu beef also contains a higher percentage of omega-3 and omega-6 fatty acids than typical beef, which we definitely cannot be mad about!
Paulina Market has tapped into the wagyu beef market so the best customers in town can get their hands on some of the action. Paulina currently purchases our wagyu cuts from Wagyu Excelente which breed full blood Tajima Bulls, reigning from the Japanese Black wagyu beef strain.
These Tajima bulls are proudly raised on The Gearhart Ranch in Fort Davis, TX where they get nothing but the best treatment! The feed regiment consists of natural grass to enhance the beef with essential nutrients, and the bulls are provided a wet brewer’s grain to provide intense marbling and a lighter olive oil finish!
